Dornröschenschloss Sababurg, the Sleeping Beauty Castle of Brothers Grimm fame, dates back to 1334. Once founded to protect pilgrims it became in 1490 a hunting lodge for the royal court of Hesse in Kassel. By the End of the 19th century the castle was fallen in ruins and was named a saga and fairytale castle inspired by the stories of the Brothers Grimm. The Koseck family woke up the place back to life in 1957 as a historic and cultural hideaway.

The selection of dishes at the food and coffee tavern »Heimatpforte« and at the evening restaurant »Rosenkrone« of the Dornröschenschloss Sababurg follows the tradition of royal hospitality at a hunting lodge of the Landgrave of Hesse and the fairytale castle of the Brothers Grimm.
Profound cooking and kitchen crafts form the basis for our nutritionally conscious and organic-oriented offers. The menu distinctly focuses on processing regional and seasonal products of the Reinhardswald, the Weserbergland area and northern Hesse, where the Brothers Grimm lived. We pay special attention to the food's production conditions and origin. In addition, we strive to interpret and adapt historical recipes, especially from the repertoire of the Brothers Grimm, and to offer you culinary specialties relating to the rose, because – in the famous fairy tale – when the king's son approached the hedge, it bore fragrant rose petals instead of sharp thorns, so he was able to pass unscathed ...
Both our menus will be reviewed every month to adapt to the changing range of available goods in the course of the year.
The Vesper-dishes (11 am to 9 pm) and the lunch menu (12 o'clock to 2 pm) at the food and coffee tavern »Heimatpforte« are more traditional and rustic.
The dinner menu (6 pm to 9 pm) at the evening restaurant »Rosenkrone« reflects our overall approach in a nobler and more modern way.
